Kat's Cookie Corner: A load of sweets, pastries and meals Ep.1

I told my best friend Kat Quitlong that I'll be the one to promote her amazing cooking skills in this blog. She is currently studying at the University of the Philippines Diliman and will go to Japan this year to hone her Japanese skills and explore her teaching career in a whole new country for ten months. Without further adieu, here's her load of pastries, cookies and many more!

1) Mango Cream Puffs

 1) 2 (3.5 ounces) packages instant vanilla pudding mix
2) 2 cups heavy cream
3) 1 cup milk 
4) 1/2 cup butter
5) 1 cup butter
6) 1/4 teaspoon salt
7) 1 cup all-purpose flour
8) 4 eggs

2) Classic Chocolate Chip Cookies

1) 1 cup butter, softened
2) 1 cup white sugar
3) 1 cup packed brown sugar
4) 2 eggs
5) 2 teaspoons vanilla extract
6) 3 cups all purpose flour
7) 1 teaspoon baking soda
8) 2 teaspoons hot water
9) 1/2 teaspoon salt
10) 2 cups semisweet chocolate chips 
11) 1 cup chopped walnuts

3) Pesto Pasta with Eggplant Chips


Pesto Pasta with Eggplant Chips



  • For the Pesto
  • 1/4 cup pine nuts
  • 1 clove garlic
  • About 3 cups basil leaves loosely packed
  • 1/4 cup grated Parmesan (see Tips)
  • 1/4 cup olive oil
  • Little salt to taste
  • For the Pasta
  • 1 pound fusilli (or use trenette or penne pasta)
  • 1 large eggplant, cubed (I used 5 small eggplants)
  • 1 tbsp extra virgin olive oil
  • Little salt to season

1 pack of whole wheat penne pasta
1 can of tuna in oil
1/4 cup calamansi juice
1 can sweet corn
1 large cucumber
5 medium fresh tomatoes

5) Cheese and Macaroni Quesadilla with Cold Tuna Pasta Salad 

Cheese Macaroni Quesadilla with Cold Tuna Pasta



Ingredients:


4 Misson Super Soft Tortillas
2 cups dried pasta
1 tbs butter
1 tbs flour
3/4 cups milk
4 oz cream cheese
1/4 tsp smoked cumin
1/8 tsp salt 
1 cup shredded cheddar cheese
1/2 cup black bean salsa
Non stick cooking spray


1 (12 ounces) package macaroni
3 tomatoes, seeded, diced,  peeled
3 stalks celery, chopped
 1 (12 ounce) can tuna
1 &1/2 cups light mayonnaise
1 tablespoon Italian-style salad dressing
1 tablespoon white sugar
1 pinch ground black pepper
