Kat's Cookie Corner: A load of sweets, pastries and meals Ep.2

Craving for more? These are the next five recipes and mouth-watering pastries and meals my friend Kat has in store for you!

1) Tomato-Basil Wrap with Strawberry Dressing

Tomato Basil Wrap with Strawberry Dressing

Ingredients
  • Tomato-Basil Tortilla Wrap (got this from French Baker)
  • Strawberry Dressing (I don’t know if it’s available in Manila, I bought it at Baguio)
  • tuna flakes
  • lettuce
  • tomato (diced)
  • cucumber (peeled and cut thinly)
  • Laughing Cow Plain Cheese Spread
Procedure
  1. mix tuna and cheese spread
  2. heat tortilla wrap
  3. spread strawberry dressing in the tortilla wrap
  4. place lettuce, cucumber, tuna, tomato
  5. roll tightly
2) Strawberries dipped in Chocolate and topped with Whipped Cream

 6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20) washed and dried very well
1 cup whipped cream

3) Chicken Meatloaf Muffins




800 grams ground chicken
1 medium onion, minced
4 tablespoons grated carrots
1/4 cup minced bell peppers
1 large egg, beaten with 2 teaspoons salt
1 cup plain breadcrumbs, 
      soaked in 1 cup water
1 cup smoky barbecue sauce, 
      divided salt, to taste
vegetable oil or extra virgin 
     olive oil for brushing

4) Ultimate Dark Chocolate Chip Cookies




3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg
1 cup coarsely chopped nuts
1 package (12 ounces) semisweet chocolate chips (2 cups)
2 1/4 cups Gold Medal all purpose flour
1 teaspoon baking soda
1/2 tablespoon salt
5) Healthy Broccoli Stir Fry



Ingredients
  • 1 stalk of broccoli
  • fish fillet cut into bite size
  • Japanese firm tofu
  • shiitake mushroom 
  • minced onion and garlic
  • 2-3 tbsp 70% less-sodium oyster sauce to taste
  • olive or canola oil
